Hmm. I can see why you’d go with baked strawberries when combined with mascarpone, although I’d personally have preferred sugared fresh ones and clotted cream or something. Comparatively unoriginal, I’ll admit, but I’m not a fan of the texture of cooked strawberries. But setting my personal tastes aside, it does look gorgeous.
Honestly, I’m right there with you, but these were strawberries that would have been uneaten before I went away for a week. Baking them meant I could keep them alive in the fridge until I returned.

So, you make pancakes but on a teensy bit lower temp and then you flip it once there are so so many bubbles? Or am I misunderstanding the method

Its quite different from a pancake. It has more leavening and its the extra yeast that creates bubbles.
Normally, you would use a ring/mold to get them the traditional size. This one was made in a small pan. For reference, in this one crumpet, there is the equivalent of four crumpets worth of batter

Baked Strawberries? Not sure that’s how it’s Berry this up. Either Macerated oray flash fried, but baking just seems it would ruin the texture and flavor something like this.
