For most people this will be a simple email-based age verification, presumably based on age of your email or Xbox account, but there’s a number of other ways that you can also verify your age including:

Email-based age verification  
Facial age estimation using a secure selfie  
Credit Card  
Government-issued ID, such as your driver’s license, passport, national ID, or residence permit
