I attempted a recipe I was getting from a local diner. You just crumble and squeeze some extra firm tofu in a oat milk bag, and toss it with some curry powder. Then fry it up with some onions, peppers, black beans, corn, spinach and really whatever feels good.

I served it with some fresh seeded sourdough toast from a local bakery and some tater tots (because I’m way too lazy to make proper hash browns)
